In 2022 my halves averaged 315 pounds, ranging from 282 to 363 pounds.

In 2023 my halves averaged 346 pounds, ranging from 320 to 376 pounds.

For 2024 I expect them to be a little less than 2023.

Well there is some disagreement here, but I would say all the following are great steaks:

            Ribeye Steak (also called Rib Steak)

            New York Strip

            T-Bone ( but it is made of both the New York Strip and Tenderloin)

            Tenderloin

            Top Sirloin


The price of a half is highly dependent on the price I pay for the hay and the grain I feed them over the winter and to finish them. Since 2022 there have been major increases in hay costs from $200 per ton in 2021 to $325 per ton in 2023. Calf prices have gone for $2.04 per pound live weight at weaning in 2021 to $3.35 per pound in 2023.

Prairie Harvest Farm has always produced extra, extra lean ground beef (I would call it ultra lean) with minimal shrinkage and excellent flavour.


  

The butcher I use is in NE Calgary not far off Deerfoot Trail.


Yes, shipments can be arranged but the cost of shipment is on the customer.
